When the food we eat comes from soil that is low in minerals
or the way the food is stored depletes the mineral content, our consumption of minerals will be low.
Minerals are required to:
Support body cells and structures: For example, calcium and phosphorus help build bones, and iron is an essential part of red blood cells.
Regulate many body processes. Eg, Sodium and potassium are important for nervous system function. Chromium helps keep blood glucose levels normal and Selenium works with vitamin E as an antioxidant, preventing cells from being damaged by oxygen (1).
