Australian researchers at the Southern Cross University compared the antioxidant activity of 55 medicinal herbs via three different extraction processes. The antioxidant capacity of the herbs was evaluated using the ORAC assay which stands for Oxygen Radical Absorbance Capacity. The highest antioxidant activity was found in Olive Leaf Extract followed by Black Cohosh, rhubarb, licorice and Virginia Skullcap (1)
Antioxidants provide protection against oxidative damage which is caused by free radicals. Excess production of free radicals (molecules which may attack any part of the cell or tissue) and weakened anti-oxidant defenses may result in a shorter life span, damage to the DNA and oxidation of fats and cholesterol.

The above ingredients are processed in a probiotic fermentation plant that ultimately changes the structure to create a rich probiotic food.
